Summer Rolls

For all of those who never tried maybe a bit weird for others not replaceable: summer rolls. Usually you can find these little rolls at asian places and I’ll admit that sometimes they might look a bit weird. But for those who never tried – you are missing out! Especially in summer it is a fantastic first course or main dish and can be really entertaining as well if you just put the fillings and rice paper on the table and everyone makes their own version.

What I really love about summer rolls is that you can get very creative. Basically you can put everything in. Vegetables, fruits, noodles or tofu it doesn’t matter. Sweet summer rolls are super delicious as well! Just imagine the combo of mango and mint. In general herbs go perfectly with this dish especially mint and cilantro (although personally I’m not a huge cilantro fan, it tastes like soap for me).

Of course you have to have a dip with summer rolls. In this recipe you can find my favorite dip which I serve with them most of the time. Did you ever try a different dip? I would really need some inspiration when it comes to that.

My favorite fillings are definitely avocado (because avo is just great and makes everything creamy) as well as glas noodles and any kind of tofu (marinated or smoked). I only recently discovered my love for mint so this is a must add for me now, too.

You can easily prepare summer rolls in advance and store them in the fridge. It is a nice and fancy thing to bring to a buffet or BBQ as well! And did you know that summer rolls are actually the non-fried versions of spring rolls?

Last summer I made summer rolls with Anna. I still remember it was a beautiful summer day and we planned making these as a finger food to snack on while watching the German soccer team play a game on national level – although we are both not the biggest soccer fans but the soccer obsession in Germany just draws you in. Anyways we almost got a bit stressed out because we still had to take pictures and the game was about to start but we managed it and had a really nice evening. One tip before you go shopping now: I can really recommend using the rectangle rice papers or at least the big round ones. Also you should make sure to roll on an even surface otherwise the rice paper can stick really badly and maype get some cracks.

Summer Rolls

The ideal summer first course or main dish and perfect to bring to a buffet and prepare in advance! A must try for everyone who loves the Asian kitchen!

Ingredients

For the rolls

  • rice paper 10-15 pieces
  • 100 g glas noodles
  • 2 carrots
  • 2 pointed bell pepper
  • 1/2 cucumber
  • 200 g smoked tofu
  • 1 Avocado
  • mint

For the dip

  • 1 tbs tamari
  • 2 tbs peanut butter
  • 2-3 tbs coconut cream

Instructions

  • As first step you can prepare the dip. Simply mix all ingredients listed below and set aside.
  • Next step: Cut the ingredients for the filling into slices.
  • Prepare the glas noodles as described on the packaging. Often the only thing you have to do it pour hot water over them and let them soak for about 5 minutes.
  • Now the most difficult part: make the rolls! Put a rice paper into warm water (I always pour some warm water in a pan) and place it on an even surface.
  • Place glas noodles, fillings and mint in the middle of the rice paper. Wrap the bottom part of the paper around the filling, fold in the sides and wrap up until you have a role. Continue until no fillings are left.
  • Serve with the dip!

Notes

If the dip contains too much fat for you try to use peanut flour instead of peanut butter and a bit more liquid!
