Sometimes you simply don’t have the time to prepare a proper breakfast in the morning or you want to eat it on the go to save time. In situations like that it is always useful if you can prepare your food the evening before. This breakfast is nutritious, satisfying and delicious!

It is well known that oats are easy digestible but soaking them over night improves this characteristic even more. Of course you can also eat this breakfast at home but if you need something to take with you to work or an appointment this one might be a good option for you. You can easily adjust this recipe to your need or modify it e.g. by adding some chopped dates, dried figs or raisins.

Easy, healthy and delicious breakfast to prepare in the evening and grab for breakfast on the go the next morning.

Ingredients

  • 120 g oats
  • 60 g buckwheat
  • 4 tbs chia seeds
  • 2 tbs shredded coconut
  • 400 ml oat milk
  • 300 ml water hot
  • 2 tea bags chai tea
  • freshly ground vanilla
  • 2 tbs sweetener of your choice e.g maple syrup
  • fresh fruits and frozen berries

Instructions

  • Bring the water to a boil and pour over the tea bags. Let them infuse the water for about 10 minutes - the longer the better.
  • In a bowl mix oat, buckwheat, chia seeds, shredded coconut and vanilla with a spoon. 
  • Now add chai tea and oat milk, give it a good stir and add sweetener to taste.
  • Put the bowl in the fridge and let the whole thing soak overnight.
  • In the morning layer in jars with fresh fruit (bananas and grapes are perfect) and frozen berries.
  • Don't forget the spoon and you're ready to go!
