Basic Vegan Pancakes | 6 Ingredients

Since this recipe was requested quite often I decided to upload my basic pancake recipe I use the majority of the time when I prepare pancakes. I usually don’t measure everything exactly but did it this time to write it down and publish it here. These bad boys are super easy to make, healthy and utterly delicious. You can even prepare them for the whole family and I promise, they will love it!

Grundrezept Pancakes

Pancakes without egg? Is that even possible?

Surprisingly there is still this prejudice that you need egg in order to make good pancakes. This is definitely not right. The dough turns out perfect without adding egg or any other egg substitutes. For fluffy pancakes I always add a teaspoon of baking powder and a teaspoon of chia seeds, though.

This recipe is truly simple and is made of basic ingrediens everyone should have at home. It is also approved by my family and friends so make sure to give it a go.

In general you should always remember one rule: the “whiter” the flour, the fluffier the pancakes will turn out. I personally avoid wheat when I can because my tummy doesn’t like it too much. Nevertheless you can achieve a super fluffy result when using white wheat flour. Usually I got for a wholegrain spelt flour in combination with grounded oats instead. If you’d only use wholegrain spelt flour the pancakes would be super dense. Only using grounded oats is risky as the pancakes might fall apart. For me the above mentioned combo works great and if I prepare pancakes for friends I usually go for white spelt flour instead of grounded oats (to achieve a fluffier result).

If you begin to stir in the wet ingredients make sure not to overmix the dough as it can become to dense when doing that. Other than that there is nothing more to watch out for.

My favorite things to serve with these pancakes are:

Fruit of any kind  a syrup (e.g. maple, date, coconut palm sugar …) and some kind of chocolate spread or nut butter. I can also recommend the chocolate peanut sauce from my other pancake recipe .

Ingredients

  • 70 g ground oats*
  • 40 g wholegrain spelt flour
  • 1 tsp baking powder
  • 1/2 - 1 tbs maple or date syrup/ coconut palm sugar or any sweetener of your choice
  • 1 tsp chia seeds optional
  • 150 ml water

Instructions

  • In a bowl combine all dry ingredients and give them a stir.
  • Now add the wet ingredients and mix until combined. If the dough is to thick add a little more water.
  • Now heat a pan on the stove. Once the pan is hot you can bake the pancakes (you might need to use a little coconut oil) until golden.

Notes

*I always ground my oats with a high-speed blender. If you don't have one you can substitute with white spelt flour.
