Even if the name might sound a bit complicated: these Peanut Butter Protein Blondies only consist of seven ingredients! No flour, no gluten, no lactose and therefore not only allergy-friendly but also super delicious and vegan of course.
Originally, I wanted to bake something like brownies or really anything with chocolate but then I thought ‘Tanith, not everyone is a chocolate junky like yourself – maybe people want to see something different sometimes’. The result were these blondies (chapeau to the one who thought of this genius name in contrast to brownies).
Well, when you want to make Protein Blondies the rest of the ingredients should be health and fitness conform too, right?. At least this was my feeling. With that the blondies even fit in if you’re on a diet which I am not the type for but still I keep an eye on my protein intake to make sure it is enough.
In general I prefer natural protein sources like lentils, beans, chickpeas, peas, quinoa, chia seeds, nuts, sometimes tofu and furthermore vegan protein powder. The ones who follow my story in Instagram might already know that the Sunwarrior protein powder is one of my absolute favorites. A little story about vanilla and me: I acutally used to NOT like vanilla. Vanilla ice cream was one of the most boring foods for me and I didn’t think it was delicious as all. This has completely changed. I now love the taste of fresh vanilla. I know it can’t be compared directly to the protein powder but in my opinion the Sunwarrior Protein has quite a good and not too superficial vanilla taste.
These Protein Blondies are therefore perfect for everyone who:
- wants to have a snack rich in protein
- can’t do gluten
- thrives on a vegan diet
- wants to try something new
- loves peanuts and vanilla
It would be ideal to store the finished blondies in the fridge. You should be able to keep them there for 5-6 days unless you finish them before.

Peanut Butter Protein Blondies
Ingredients
- 480 g chickpeas canned or cooked
- 2 scoops Sunwarrior Classic Plus Vanilla *
- 80 g peanut butter
- 2 tsp baking powder
- 70 ml plantbased milk
- 25 g maple syrup
- a handful vegan chocolate chips
Instructions
- Preheat the oven to 180°C.
- In your blender combine all the ingredients listed above except the chocolate chips. Blend well until no chunks are left.
- Line a brownie tray with parchment paper and spread the batter evenly. Put the chocolate chunks on top.
- Bake the blondies for about 25-30 minutes and let them cool down afterwards. Store them in the fridge to keep them nice and fresh.
