Muesli cookies with chocolate drops

Are you ready for the perfect snack? Everyone who loves muesli bars will definitely love these muesli cookies, too. Whipped up within a few minutes these are definitely super easy to make and a healthy alternative to all the sugar-packed bars and cookies you can buy in the supermarket.

In fact, you only need a few ingredients to make your own delicious muesli cookies. Of course oats are essential – otherwise I guess they wouldn’t be muesli cookies. Of course any other kind of grain flakes are good as well such as rye or spelt flakes. However, these are not necessary – you’ll be just fine with using rolled oats. Any kind of nuts and dried fruit are perfect as well. I used a combination of walnuts and raisins.

The Alternatives

For those of you who don’t like raisins (and I know for sure that some people hate them), don’t worry! You can easily substitute raisins with cranberries, dried figs, dates or basically any kind of dried fruit you like. Instead of walnuts you can also change up things and use peanuts, brazil nuts, hazelnuts or pecan nuts. You will notice very quickly that you can get as creative as you want.

For making everything stick together I used mashed banana in this recipe. It also adds the necessary sweetness to make the cookies very enjoyable.

Müslikekse vegan

Of course we can’t miss out on chocolate here – I used the chocolate drops by KoRo for this recipe. These are just sweetened with Xylitol and vegan of course. The ingredients are the following: Cocoa Mass, Xylitol (25%), Cocoa Butter, Emulsifier: Sunflower Lecithine. For me this is perfectly fine and I can only recommend them. If you want to order in a big batch, KoRo is definitely the place for you. With my code ‘TANITH’ you can get a few percent of your order (I don’t earn anything if you use the code, I simply got the products for free). However, if you don’t have any vegan chocolate drops on hand you can simply chop up some dark chocolate and use this instead.

Vegan Muesli Cookies

Ingredients

  • 130 g rolled oats
  • 50 g raisins*
  • 25 g chopped walnuts**
  • 50 g vegan chocolate drops
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 2 small bananas ripe, with brown dots
  • 50 ml oat milk or any other plant-based milk

Instructions

  • Preheat the oven to 200°C. 
  • In a bowl mix all dry ingredients.
  • Peel the bananas and mash them with a fork. Add the banana mash into your bowl as well as your oat milk.
  • Knead the dough with your hands until well combined. Form cookies and place them on a baking tray lined with parchment paper.
  • Bake for about 20-25 minutes until golden, let them cool down and enjoy.

Notes

* if you don't like raisins or want to change things up use dates, dried apricots, dried figs, dried plums, etc instead
** instead of walnuts you can also use hazelnuts, peanuts or pecan nuts
